A slightly sparkling red wine. Cold maceration for 24 hours. During first 7 – 8 days of fermentation, pump-overs 2 times a day. Fermentation in temperature controlled stainless steel tanks. Aged for 3 months in stainless steel tanks. Brief bottle fermentation for 3 months.
"Massimo wasn’t going to voluntarily tell us that he produced this delicious little sparkling Freisa “for his joy” (and his family’s consumption), but once we noticed and tasted one, we insisted on scoring some, and he caved in. It is bone-dry with aromas of dark forest berries, with a finish that is both grippy and slightly frothy.
